Never too old to learn, Knox has been studying oil painting for five years with teachers in Vermont, Utah, and Steamboat. Two of her oil paintings are in the show, but her love remains in the medium of watercolor. Knox is also known for the feathers she paints — all picked up during her daily walks outside her home in Hahn’s Peak. Knox’s work can be found in homes and businesses across America and even in Europe, where she taught for several years in Great Britain. She and her husband, David, raised three children in Wisconsin before moving to Hahn’s Peak 29 years ago. They both still work — she teaches art, and he runs an antiques foundation. The secret to Knox’s long career and talent for realism in watercolor can likely be traced back to her work ethic. “I’m a disciplined artist drawing every day, not one of those Bohemians,” she laughed. Even in the sometimes-chaotic life of motherhood, she always found time for her art. “Three o’clock in the morning, you wake up and do a painting from 3 a.m. to 6, give the kids breakfast, and they’re off to school,” Knox said. While not painting full time as she raised her children, Knox was known for volunteering her artistic abilities in the communities in which she lived. In fact, Hahn’s Peak has Knox to thank for running their arts and crafts fair at its popular Ice Cream Social for many years.

Elkstone Farm is a permaculture-inspired farm located in Strawberry Park, Steamboat Springs. We use sustainable practices to build the health of our soil and, in turn, raise healthy, flavorful fruits, vegetables and herbs. We offer our produce fresh as well as incorporated into delectable baked goods and other value-added products. We are committed to offering our community the best our farm can produce and sharing what we learn along the way. We have a number of different growing environments in which we grow more traditional annual and perennial fruits (apples, cherries, berries, etc.), vegetables (greens, carrots, tomatoes, peppers, cucumbers, etc.), and herbs(culinary and medicinal), as well as more atypical Mediterranean plants such as citrus and figs. We use all natural products and lots of compost. We use crop rotation and cover cropping with green manure or nitrogen fixers to help maintain soil health. We rely on beneficial insects to aid us in combating pest problems, as well as for pollination. We import these good bugs and also plant habitats that entice and support bees, ladybugs,and other beneficial insects. We plant in patterns that enable the plants to support each other, the way a natural forest occurs, with upper-stories of trees, mid-stories of berry bushes, and under-stories of herbs, vegetables, and cover crops. We call our outdoor gardens “Fruit Forests” because that’s what they are! We grow year round in our three unheated hoop houses and our greenhouse. The greenhouse is engineered to maximize passive solar heat and is supplemented by a pellet stove.

Food has always been a hobby for me. I’ve always loved to cook…and eat. In recent years, that love has grown to include more and more food-related activities. I’m a food science nerd… I geek out over food styling (I actually have a color wheel so that the color of my napkins complements my food) and I’m learning more and more about food photography every day. My path to becoming a “vegan” (more on those quotes below) started when I accidentally attended a lecture on plant-based eating. A friend of mine asked me to join her for a speaking event called The Anti-Inflammatory Kitchen. I felt bad because I thought that meant she had bad gas, so I went. During that lecture, I learned that an anti-inflammatory diet had little to do with having gas and a lot to do with eating to live well. While my decision to change to a plant-based diet started out for health reasons, it’s now largely fueled by environmental concerns. As you’ll see below, I’m a huge fan of spending time outdoors. High Country Custom Beef is a family owned and operated business with 5 generations of experience to back it. Our cattle are raised on lush mountain pastures with plenty of protection, feed, and water for all of our animals to share. The beef on our operation are constantly being improved through selection of premium sires that produce optimum meat characteristics so that our customers can have the best eating experience possible. We take pride in ensuring that both our cattle and our customers are cared for to the best of our abilities. Day or night, we are there to help in any way we can. Cattle are raised on well maintained pastures throughout their life. We vaccinate our cattle against illnesses, just as humans do, to ensure that our animals live a healthy life and don’t ever have to suffer. All animals on the Ely Ranch are treated with the utmost respect and all employees are instructed to follow Beef Quality Assurance guidelines to guarantee safety for both the livestock and the workers. Cattle are branded through a chute system, instead of rope and drag, to reduce as much stress as possible to the animals. We are consistently on the lookout for predator animals (coyotes and mountain lions) to ensure that cattle are not injured in any way. In the feedlot, cattle are fed premium cattle feed consisting of roughage and grain so that they may grow at a healthy rate. This process take a great load of attentiveness as the incorrect ratio causes the cattle to build up gasses in their stomach. That is why we pay constant attention to our feed rations and there is someone checking on them continuously to make sure herd health is at its best.

The Home Ranch produces grass-finished American Wagyu beef (Red Angus crossed with Akaushi (Wagyu) cattle). The Akaushi Angus crosses allow for us to offer well-marbled, delicious beef that finishes better on grass, available at a lesser cost than pure Wagyu beef. Our beef steers rotationally graze through our ranch property in Clark, using electric fence or hard fences, and are grass-fed and finished. We use horses to move and check our cattle herds, because we love the traditional ranching style, but we also are open to the new! Which is why we embrace rotational grazing and put up miles and miles of electric fence each season, and also have recently started using virtual fence technology to help us even better protect riparian areas, or keep the cows out of, or in, areas that need less or more cattle impact. The four Iacovetto girls, daughters to Lane and Jerad Iacovetto, are the 5th generation of agriculture producers living on Saddleback Ranch in Steamboat Springs, CO. The girls enjoy growing up on a working cattle ranch, barrel racing, and playing volleyball. In 2018 they started their own business raising meat chickens and have turned it into a successful summer business. The girls will be saving the money raised from their hard work to put towards their college education. They take pride in their ranching way of life, Routt County heritage, and are incredibly proud to offer locally raised poultry products.

We have a greenhouse operation just north of Hayden, Colorado. Our large greenhouse is 42’x100′ with a 42’x30′ shop. Everything is fully automated with environmental controls. It has 15 rolling benches where we produce a variety of veggies and greens along with cut flowers. We have a secondary hoop house greenhouse that’s 30’x96′. Also filled with veggies and cut flowers. Our farm practices are organic and sustainable. We use neem and predator bugs for bug control, no harsh chemicals, we’re not into that. All nutrients are organic-based and currently working on creating a sustainable nutrient system directly on the Farm. Everything is grown with love, respect, and care!

Our flock is enjoying scratching and dusting in the dirt under the shed roof in the corral on sunny days at our home near Elk Mountain. The hens wander the fields around the barn in summer, chasing grasshoppers and foraging. In winter, snowy days don’t stop the girls from laying brown and green eggs. The flock includes black australorp, white rock, speckled Sussex, barred rock, black star, silver-laced wyandotte, golden-laced wyandotte, and whiting true green. The greenhouse and garden provide year-round organically grown produce and seedlings. In the spring, I’ll often have extra tomato seedlings for sale; later in the season, I may have radishes, hot peppers, summer squash, lettuce, and more. Vegetarian chicken feed is supplemented with vegetable scraps and greens. Hens are let out to roam the barnyard and pastures every day under the watchful eye of our livestock guardian dogs, Anatolian shepherds Ruya and Kiba. Coyotes, bears, and foxes stay a healthy distance away with our dogs on duty. Organic growing practices are implemented in the greenhouse and outside garden, including the use of beneficial insects to control pests.

Mary and Karen: Mary O’Brien has been working with plants in some form for most of her adult life. Studying and practicing herbal medicine since 1987, she has studied with many renowned teachers like Rosemary Gladstar, Brigitte Mars, and Michael Moore in addition to completing the Chartered Herbalist program with Dominion Herbal College. For over 20 years, she has lived in Steamboat Springs, where she teaches herbal medicine, leads medicinal herb walks, makes herbal products for local distribution through her business Black Bear Botanicals and maintains a medicinal garden for Yampa River Botanic Park. She is certified in advanced permaculture design and teaches throughout Colorado. Her emphasis is on using native, locally-grown plants and weeds for medicine and creating personal healing gardens. Karen Vail, a Steamboat Springs native, is the “go-to” local resource for information on the area’s native plants. She holds a B.S. in Horticulture with a concentration in Botany from Colorado State University as well as a Master’s Degree in Gardening from the Royal Horticultural Society in England and a Master’s in Environmental Education from Antioch New England University. She has taught Botany at the local college and published two books, For the Joy of Wildflowers: Colorado Creations, and Yampa Valley Visions: Photography and Writing of a Yampa Valley Naturalist. Karen also co-published a video/DVD “A season of Wildflowers; The Rocky Mountains”. Vail owns and runs Karen’s Growing Ideas, a landscaping business, leads local wildflower walks, and teaches through local environmental education organization, Yampatika as well as a variety of other local venues.

We will provide the highest quality Original American Red Meat and other produce! Who We Are: Nestled in the valley of Trout Creek, one man’s dream became a reality. We manage over 3000 acres for our growing herd of 450 Bison. They are pasture raised, grass fed, grass finished. All natural, no hormones (by federal law), no antibiotics, and no stimulants. Bison meat is leaner, carries less fat, calories, and cholesterol, and is richer in flavor than most other meats, including beef and chicken. We also sell Bison By-Products: Bison Fiber, Bones, Horn Caps, Skulls, and Hides. As a fun side project, we raise a current flock of 20 laying hens. Our chickens live in a palace equipped with electricity and water. They have two spacious runs that they roost in when it is nice out. The palace has automatic doors that open in the morning with the sunrise and close with the setting sun at night to keep them safe from predators. We feed them a vegetarian diet of layer pellets and scratch and pasture grass. They even have toys to play with when they are bored. We raise happy and stress-free chickens which you will be able to see in the color of the yolks and taste in the flavor of the egg. Holistic! What is Holistic? Holistic management is the process of managing people, funds, animals, and land in harmony and balance within its own whole and the other wholes it interacts with. Instead of just managing livestock we manage an entire ecosystem. With efficient grazing and encouraging natural processes to occur, we maximize the use of our land. By encouraging natural processes in the land it encourages the growth of the biodiversity among our pastures by bringing in new species of anything from bugs to birds to large game.

Lupita’s Hot Sauces formed in 2009 when Lawrence and Paula Jaconetta opened a little taco stand in Oak Creek. As we changed, our little taco stand changed to find better and better ways of running. Located on 300 acres at the left foot of Sleeping Giant just north of Steamboat Springs, Colorado. Milk from happy cows that live on pasture and eat a grass-based diet, is the basis of all our products. Our cows graze outdoors, year-round, our pastures are full of native alpine grasses, clovers, and legumes. This combination of forage (coupled with the mineral-laden irrigation water located here in Yampa Valley) is a perfect food for the cows. It is nutrient-dense, high in Omega 3 fatty acids, and the rapid rate at which the grasses grow serves to concentrate all of the goodness. There is no need for our cows to consume grain, the grass we grow here is all they need for health and vitality. Our herd is a diverse mix of heritage breed cows, known for both their rich milk, ability to thrive on grass alone, and smaller milk proteins. Our girls are a mix of Brown Swiss, Jersey, Guernsey, and Normandy breeds. Low stress cows eating grass and with freedom to roam produce rich, creamy, high-quality milk that makes amazing cheese!

Our CBD comes from a small Colorado farm right to our kitchen. We formulated our CBD treats for our Co-Founder Zoe, (who crossed the rainbow bridge in June of 2018), she had major arthritic pain. O’Johnson Giardiniera – It all started with a love for Giardiniera the first time Dave visited Chicago. It was always too hot for Colleen. Long story short, when we all were not allowed to do anything back in April 2020, we decided to try making our own Giardiniera. We started selling our Giardiniera at the Hayden Farmers Market that summer. Dave does the chopping and Colleen does the sealing. Giardiniera means “gardener” in Italian. In Chicago, where Colleen is from, it is a must-have household condiment. It adds flavor to anything, Italian beef sandwiches, pizza, sausage, burgers, hot dogs. sandwiches, salad, eggs, muffuletta layer, pasta salad, spaghetti, antipasto, add to your cottage cheese, baked potato, dips, charcuterie boards, ANY crockpot dish and more. Not your traditional relish. We let the vegetables do the talking. Jars are shelf stable for a year. Once opened we recommend refrigerating. You can buy our products year-round at the CAA Market in Downtown Steamboat Springs. Stanko Family Ranch has been in the Yampa Valley since 1907. The chickens are raised by Justin the youngest of the Stanko’s in the valley for his college fund. Other products are from the family ranch located just west of town. All chickens are happy free-ranged chickens that are guarded by our livestock guarding dogs, BO, Kiba and Maverick. The flock was turned over in September of 2021 and the flock consist of French Black Cooper Marans (Chocolate Eggs), Whiting Blue and Green Egg Layers, Ameraucana (Easter Egg Layers), Red Shoulder Yokohama (Small White Eggs). The chickens are fed Purina Chicken feed and what they find in the yard as they free range. All other animal products are grass fed on the ranch.

Stay at Home Chef has been in the Elk River Valley since 1999. First working at The Dutch Creek Guest Ranch at Steamboat Lake, and then gradually building her business into what it is today: a personal chef specializing in in-home catering for intimate groups. With over 40 years in the restaurant industry, Sharon has a lot of experience! Sharon started canning as a girl with her mother Andrea in Maryland. Andrea had a bountiful garden, and many of Sharon’s recipes date back to those days growing up on Chesapeake Bay. Among them being “Mom’s Tomato Jam”, “Pickled Corn Relish”, and “Watermelon Rind Pickles”. Sharon is pleased to be offering these family recipes for pickles and jams, as well as some modern take-offs of the classics, for the first time as a Colorado Cottage Business. The selections will vary throughout the year as the markets inspire.

The Farm at Home Ranch is a thriving vegetable farm and egg operation on the larger Home Ranch, with a mission to sustainably feed the North Routt community and its visitors at the altitude of 7,200 feet. A beautiful complex of stunning gardens, new 4-season greenhouse, hoophouses, and orchard, the farm demonstrates how a high-country farm in Colorado can flourish with ingenuity, hard work and the singular vision of its energetic and inspired owners, the McFarlane family. Our farming principles focus on minimizing non-organic inputs and working with our extreme climate instead of against it. While we are not certified organic, we follow organic and permaculture practices of soil fertility, cultivation, and integrated pest management. Our chickens and ducks are proudly free-range and fed a diet of conventional chicken feed and lots of fresh farm veggie scraps.

Three Springs Cattle Co. is a cattle ranch in Dinosaur, CO. Grazing is done in rotations that allow the grass adequate time to regrow. Cattle are managed in sync with nature and range on the grass for most of the year. Some supplements are used on the range, and hay is fed when needed. Cattle are born, raised, and sent to slaughter from the ranch. They are not fed grain rations nor given any steroids. Genetic testing for tenderness and other desirable meat qualities along with good animal husbandry practices allow the Three Springs to offer healthy, nutritious, and tasty beef.

Hallie and Reece Melton are first-generation agricultural producers in Routt County. On 35 acres of sagebrush rangeland in Toponas, Colorado, we knew we would be limited in what we could produce in a sustainable way. The answer was clearly chicken ranching. We are proud to produce rainbow assorted eggs for the local community here in Routt County and raise our hens on native pasture. For us, it is a top priority to produce nutritious and high-quality eggs in an ethical manner. Hen health starts with natural behaviors. Trout Creek Hops is located in the Yampa Valley just west of Steamboat near the confluence of the Yampa River and Trout Creek. I have approximately 75 hop plants dating back to 2016. I grow Cascade, Willamette, and Nugget varieties. During April/May we collect rhizomes from the mature plants and in early September the cones are harvested. In the fall we will have fresh hops that can be used in beer making and will dry the hop cones for storage. Hops are not just for beer! They can be used in a variety of food and beverages or just as an ornamental plant in your garden. If you need a quantity of rhizomes or dried cones that is not listed, please contact me for other options and pricing. The hop plants are fertilized in the spring with a commercial fertilizer and compost added in the fall.

The Knott Ranch is nestled under the Flat Tops of Oak Creek, Colorado. We are five generations of stewarding the land and producing wholesome, safe, and nutritious lamb and beef while still providing critical wildlife habitat and healthy rivers. We strive for both sustainability in managing our natural resources to provide reliable products year after year and resiliency in being able to adapt to both changing economic and ecological conditions. Our ranch has been in our family for 85 years. We are looking towards becoming a Centennial Ranch. The livestock are born, raised, and cared for in South Routt County at the headwaters of Trout Creek in the Yampa River Basin, providing the consumer with a truly locally sourced meat. We have been selling lamb and beef direct for years. Now fully established with USDA labeling, you can feel secure knowing our products are butchered and processed locally. Our animals are raised with love and respect, and we enjoy providing healthy and wholesome products. The cattle and sheep graze mountain pastures from June through November until snow requires they be fed native grass hay produced on the ranch. During the summer months, our livestock have free range in large mountain pastures ranging from 100 to 1,200 acres in size. The lush feed of brome and timothy grasses produce phenomenal rates of gain. The animals are checked regularly by horseback during which the pasture conditions and grazing pressure is carefully monitored. The ranch uses a modified deferred-rotational grazing system. The goal is to keep the animals on fresh forage and clean water while leaving sufficient residual feed to sustain wildlife and hold the snowpack through the winter. Pasture rotation and resting occurs to ensure plants mature to seed production at least once every three years. Our animals are never given hormones or antibiotics to enhance growth. Quality control is paramount and animals are individually identified to ensure traceability and health. Everything is pasture bred.

True Leaf Microgreens is a Micro Farm located in Oak Creek Colorado and is owner operated by Taylor and Angie Baker. We specialize in growing micro crops such as Salad Mixes, Radish, Broccoli, Sunflower, Cilantro, Basil and others. We buy our seeds from True Leaf Market. We begin the growing processes by rinsing the seeds and then carefully sorting through them to remove any imperfections. All microgreen crops are grown in an organic Promix soil. True Leaf Microgreens are grown indoors in a temperature (65-75 degrees) and humidity controlled (around 47%) environment. Harvesting is done on a stainless steel NSF certified table stationed right next to our growing shelves. Care and consideration is involved with everything we do. We even give all of our leftover harvested trays to the neighbors chickens.
